BEER TERM—DRAFT (OR DRAUGHT )

Draft (or draught) is an Old English word meaning "to
pull." Picture those massive draft horses such as Shires and
Clydesdales, who used to haul wagons of beer from brewery to bar.
Beer itself is "pulled" up from cellar casks in Britain
(and in the best U.S. places, too) by pumps known as beer engines.
This technique predates the introduction of carbon dioxide and
nitrogen in beer dispensing. It works by suction (rather like
siphoning gas out of your car tank), and it makes for a creamier
pint.
